Domestic Airport Food Court Review

TASK

• To review a food court refurbishment proposed by the incumbent caterer and make robust recommendations for best use.

OUTCOME

B&P made extensive, substantiated recommendations on changes to the tenancy mix and adjacencies that specifically included:
Change of food court uses to reflect a mix more aligned to the market demographic preferences rather than the ‘operator’ preferences.

Changes to adjacencies to improve upon strike rates at different day parts according to passenger loads and travel paths.
Introduction of higher ATV bar and cafe concepts not currently available airside that were congruent with the pax profiles and load times.

Upon implementation of these recommendations the overall psr increased by 25%.
